Executive Sous Chef

 The James Cook Hotel Grand Chancellor is one of Wellington’s most well-known Hotels. We are part of the Grand Hotels International group with hotels located throughout New Zealand, Australia, Malaysia and Singapore.  Grand Hotels International is known for quality accommodation, exceptional service, convenient locations and outstanding conference and meeting facilities.  James Cook Hotel Grand Chancellor is home to Whitby’s Restaurant and Bar which is famous for its superb a la Carte and Buffet menu. We also operate a smaller more intimate restaurant, Sojourn CafĂ© and Bar, 8 Conference & Event rooms and a 24 hour room service menu available for guests staying in one of our 269 guest rooms. This role is to support the Executive Chef, and his team of 20-25 team members.  In the Executive Chef’s absence the successful candidate will take charge of running the shift effectively and efficiently. This is a combination of an administration and hands on role.  it requires a team player with energy and strong leadership skills to drive the team to their full potential. The key skills and experience the successful candidate will possess are:Previous Kitchen experience in senior roles and leading a team of at least 10 team membersExperience in Conference & Events, buffets, and a la carteStrong leadership ability to lead, develop and motivate a team in a positive working environmentA sound understanding of administrative aspects such as food costings, stock control, purchasing and food product standards, manning levels and rosters, and the ability to guide and support the completion of performance development reviewsTo be creative and passionate about food and providing high standards of food serviceExperience in food control plans and food hygiene knowledge and practicesThe ability to multi-task and problem solveHighly organised and efficient with attention to detailExcellent verbal and written communication skills with the ability to build rapport with peopleAbility to liaise with different departmentsA passion for the hospitality industry and a desire to see our hotel succeed in all areas of operations Candidates for this role must be available for a 7 day rotating roster, including weekends.  The rostered start times and hours will vary due to operational requirements.
